In a heavy based saucepan over a moderate flame mix together the butter, coconut oil, natural peanut butter, coconut sugar and the honey and add in the sultanas and the ginger. Basically this was a bit of a pantry clean out, as I managed to use some old sultanas, the last of my coconut sugar, and the remainder of the peanut butter. The slice has the creaminess of peanut butter combined with the crunchiness of cornflakes with a chocolate topping. My No-Bake Cornflake and Coconut slice came about as there had been a box of cornflakes in my pantry for some time and no one was eating them so I wanted to make a healthy cornflake, muesli slice that I could enjoy without the guilt. Great for schools, kindergartens or day cares to make as can be prepped ahead of time. Take out the cornflake tray and pour over the chocolate mixture until it evenly covers the base.
